Day #204 Everyone can cook - Chef Gustau

Amongst the phone rings, piled up Job Requests, unread e-mails, suddenly my mobile rang.
It was from my beloved aunty (mom of @Lily4R), telling me how delicious the Carrot cake I made she tasted yesterday.

Wow.
Honestly, I felt so happy.
My auntie is a master in delicatessen and I felt honored when she asked my the recipe.
The minute I came back home, the cake plate was empty.
Double happy!

Here is the recipe by the way:

Ingredients

  • 4 eggs
  • 1 1/4 cups vegetable oil
  • 2 cups white sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 3 cups grated carrots (I mixed 2 cups grated carrots + 1 cup grated apple)
  • 1 cup chopped pecans (optional)
Cheese Icing:
  • 1/2 cup butter, softened
  • 8 ounces cream cheese, softened
  • 4 cups confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans (optional)
